Tobiko – the Japanese name of caviar of sea fishes from family Flying, entering into group Sarganoobraznykh. In total in family about eighty representatives who combines one distinguishing character – a peculiar structure of a trunk and internals thanks to what fishes can make the soaring flight over waves.

The main feature of flying fishes are chest fins, wide and long (2/3 lengths of a body), located highly. In flight they finish like bird's wings. The technology of processing of caviar remains invariable for 500 years. Crude caviar is matured at first in special sauce therefore it gains saltish and smoked smack.
