Guar gum

Guar gum is an E412 additive which is applied in the food industry as the stabilizer, a thickener and the substance giving to products viscosity.

The second widespread name of guar gum – гуаран, it is often possible to meet it on labels of foodstuff.

On structure гуаран it is similar to carob tree gum (E410 additive), but it surpasses it in all characteristics.

Guar gum is well dissolved in water, it elastic and rigid, maintains freezing and a defrosting.

The main supplier of guar gum is India. Besides, nutritional supplement is manufactured in Pakistan, Australia, Africa.

Use of guar E412 gum

Most often guar gum is used for production of ice cream and desserts which move cooled – additive promotes ice crystallization process delay.

As the stabilizer gum is used by producers of meat, dairy products, cheeses, jelly, jams, toppings.

As a flour improver guar E412 gum is used by production of bakery products.

As the substance providing fixing of components of products гуаран is used by producers of oils and fats.

Gum is added to sauces, ketchups and seasonings at their production – for giving of a dense consistence to them.

E412 additive can be met as a part of ready salads, juice, dry soups, canned food from fish.

Often producers apply guar gum in combination with carob tree gum, an agar, methyl cellulose, karraginany, the pectin and other substances improving structure of products. They strengthen action of each other.
