On labels of foodstuff sodium sulfite appears as E221. One more widespread name of preservative is Sodium Sulphite. A chemical formula of sodium sulfite – Na2SO3.

Sodium sulfite it is officially authorized to use additive in the food industry in the countries of the European Union, in Russia, Ukraine. An indispensable condition – use of preservative in admissible norms.

In Russia the standard daily rate of consumption of sodium sulfite makes 0,7 mg/kg of weight of the person.

In pure form sodium sulfite looks as powder of white color. It is dissolved in water and alcohol. In E221 fats it is not dissolved.

Use of sodium sulfite in the food industry

First of all, sodium sulfite is a preservative, but in the food industry it is used also as bleach, antioxidant, coolant, a reducer.

E221 is irreplaceable for production in the large volume of fruit jelly, a zephyr, jam, a fruit candy, jam, jam, juice and fruit and berries puree, berry semi-finished products, vegetable puree.

Solution of sodium sulfite use for processing of the whole and cut fruit, dried fruits by preparation them to implementation.

Additive is used also by producers of semi-finished products from mushrooms and potatoes, fruit and vegetables, fruit extracts with jellifying action, frozen, tinned and dry fruit and vegetables.

Use of sodium sulfite helps to prevent darkening of fruit and vegetables, emergence of bacteria in raw materials for production of food products.

Sodium sulfite and wine makers is actively used. E221 additive improves resistance of alcoholic drink to influence of pathogenic microorganisms, keeps coloring of initial raw materials, improves the recovery and oxidizing potential of ready wine.

Harm of sodium sulfite

Sodium sulfite in the large number exceeding norm is dangerous to the person. It is purely undesirable to inhale, swallow, apply E221 additive on skin and eyes.

Cases when the overdose and individual intolerance of sodium sulfite led to a renal failure, development of an asthmatic attack, disturbance of a water salt metabolism, emergence of allergic reaction, gastrointestinal diseases are known.

At systematic use of sodium sulfite of people loses B1 and E vitamins.

It is undesirable to children to give the products processed or containing sodium sulfite.

Also it is necessary to consider that under the influence of acids sodium sulfite turns into sulfur dioxide which is carried to substances of the third class of danger to a human body.
