Marzipan

Marzipan represents the confectionery made of mix of small crushed almond meal with addition of icing sugar or sugar syrup. In certain cases marzipan it is accepted to call weight from other types of nuts. Besides, the name "marzipan" is given food stuffs, prepared on the basis of this delicacy. There is no mention, from where a sort this popular delicacy, however a number of the countries among which Estonia, France, Italy and Germany fight for the right to carry a proud rank of the homeland of marzipan. However, proceeding from the name which literally can be translated from Italian as "Mart's bread" the probability that the palm is held by Italy is high.

One of versions of the invention of sweet more than is prosy: everything as fault was served by hunger. When wheat was deficit, and almonds were much, bread, and also other food stuffs made of it. According to other version marzipan was prepared as souls' ailments medicine, frustration of mood, a spleen and apathy as was considered that sweet has salutary effect on a nervous system.

Only three ingredients are a part of the real marzipan - it is sugar (and variations on its basis – icing sugar, syrup, sweetener), sweet and bitter types of almonds. The recipe assumes also some changes: so, instead of bitter almonds addition of essence, almond liqueur or oil of bitter almonds is allowed. A time it is excluded in general from the recipe.

The marzipan weight which is so widely applied today to decoration of cakes and cakes has no specific taste of the real marzipan.

As additional ingredients producers quite often add:

  • Various fragrances, including cocoa, orange dried peel, various liqueurs, spices, pink water, etc.;
  • Eggs;
  • Natural or artificial dyestuffs.

Differ as well ways of preparation of a delicacy from almonds. As a rule, allocate three main:

  • The cold method on egg means crushing of all ingredients at their subsequent mixing. Instead of sugar icing sugar is used;
  • Cold method without eggs;

Today a variety of grades of marzipan hardly gives in to calculations. It is considered that it is not less than 500 types of kinds of a delicacy in any way. The rank of the capital of marzipan deservedly carries the German city of Lubeck where marzipan prepares according to the ancient recipes which are contained in a strict secret. In this city also one of the largest and popular museums of marzipan is also founded.

Useful properties and caloric content of marzipan

Delicacy on the basis of almonds – a product excessively caloric. Caloric content of marzipan makes 479 Kcal on 100 g of a product which consist of proteins in number of 6,8 g; fats – 21,2 g and carbohydrates – 65,3 g.

Certainly, marzipan – a product not dietary. The use even of 100 g a day noticeably influences the general caloric content of the products eaten in a day. A combination of a large amount of fats and carbohydrates in one product is capable to affect very negatively a figure and is not recommended to the use by that who adheres to a diet.

Thanks to the fact that at marzipan there are practically only almonds the delicacy is rich with vitamin E which contains this nut much. Vitamin, in turn, is the powerful antioxidant taking active part in fight against stresses and emotional pressure. Besides, vitamin E helps to protect cells of our organism from pathogenic external factors and prevents their change caused by various diseases.
