Description of rybets

Сырть (or rybets) – fish from Karpov' family. A sort fish from Central Europe. In large numbers lives in reservoirs of Austria, Germany, the Czech Republic, Sweden and England, but you will not meet this lake and river inhabitant in France, Italy and Spain at all.

In Russia rybets is found in the southern and southwest regions where he is better known under the name "syrt". He can be met in lakes Ladoga, Ilmen, in the Gulf of Finland, and also in the rivers Narva, Neva, Meta, Volga and the Magician. Rybets also lives in the Ukrainian reservoirs, it is especially widespread in Dniester, Bug and Volga. In Europe rybets is most widespread in the Sea of Azov and the river Kuban.

Distinctive feature of a syrta is the extended nose which is completely closing a mouth of fish. Thanks to it it is heavy to confuse rybets with other species of fish. A body at a syrta quite high, covered with densely sitting big scales. A mouth sliding, and the head has the extended form. A back fin at a syrta high and short. The color of fish changes seasonally. So, in the spring, before a caviar throwing, сырть turns into very noticeable fish: the back becomes covered by a black shade, and the middle of a belly and the lower fins become red. At males of rybets during spawning on the head, branchiate covers and on the edge of scales so-called "spawning dress" in the form of granular warts of the small size is formed. Becomes closer to winter of spin at fish than a bluish-gray shade, the lower fins gain pale yellow color, and a belly – silver-white.

Rybets is fish not too large. On average its length reaches 50 centimeters, and body weight does not exceed 1,5-3 kilograms. Catch it generally in the summer or in the spring, sometimes in the fall. In warm season rybets prefers to live in the rivers, and here leaves on lakes in the winter. Rybets is known for the quick and brisk character. In the rivers it follows a rapid current and perfectly keeps on rifts. Rybets leads preferential gregarious life. Numerous packs, as a rule, from individuals of the identical size and age form. Сырть prefers to live in pure waters and places with a sandy or stony bottom, and at strong depths. Rybets eats various insects, mollusks, worms, crayfish. Sometimes, for the lack of the best food, it eats water plants.

Spawning at rybets happens late enough – in May-June. Before it, in the early spring, fish gathers in big packs and from lakes and river mouths passes up the rivers. Fish throws caviar directly in a bed with quickly current water, at depths with a stony bottom. Spawning continues about two weeks, and the caviar throwing, presumably, occurs only at night. Caviar at fish small and numerous, the berry size approximately about poppy grain. The female weighing 600 grams throws about 30 thousand berries.

Tastes of a syrta rank as one of the best and valuable among cyprinid types. Meat at fish very juicy, white color. From it it is possible to prepare a set of very tasty and delicious dishes. Rybets is good in any kind – fried, baked, stewed. From it it is possible to make tasty cutlets or egg fish dishes. But the most tasty fish rybets dried or smoked is considered. The only shortcoming – сырть is among perishable goods therefore you should not shelve its cooking.

Useful properties and structure of rybets

Meat of rybets contains a lot of protein which on the nutritional value can be compared to meat protein and even more – protein of rybets does not contain harmful saturated fats, consists of irreplaceable amino acids without which full functioning of a human body is impossible. The lysine, methionine, taurine and tryptophane belongs to these amino acids. Taurine – the most useful amino acid which as air is necessary for the people having atherosclerosis, hypostases, an arterial hypertension and other problems with cardiovascular system. Therefore сырть it is extremely useful to people with above-mentioned problems. Besides, the protein which is contained in fish is digestible and easily digested.

As well as other inhabitants of water depths, rybets contains some vitamins, macro - and microelements among which fluorine prevails. It is known that it is necessary for an organism for durability of tissues of bones and an adamantine substance of tooth, and also for health of cells of a brain and blood. Fluorine interferes with development of caries of teeth, rickets and osteoporosis. Contains much in rybets of chrome which promotes assimilation by an organism of carbohydrates, improves metabolism of a myocardium and regulates glucose level, and also the molybdenum promoting prevention of anemia.

From vitamins B rybets there is only a RR vitamin, or niacin. RR vitamin takes active part in carbohydrate and proteinaceous exchanges, normalizes activity of a nervous system, promotes work of a brain, reduces the level of bad cholesterol in blood.

Contraindications

Due to quite high caloric content of rybets it is not recommended to use to people with excess body weight. Also you should not abuse meat of rybets at diseases of a liver and pancreas.
