Process of house preparation of melted butter technologically differs from the methods accepted in the food industry. At preparation of melted butter of the house butter is warmed in deep ware and left for half an hour in liquid state on weak fire or the water bath. Proteinaceous components of butter form characteristic foam which is removed a skimmer or a spoon, and excesses of water evaporate. Scrupulous hostesses also filter a ready-made product through a small sieve or a thick layer of a gauze, for the purpose of removal of the remains of foam which inevitably remains during the work with a spoon and a skimmer.
