Structure of chacha

Traditional chacha make of grapes with addition 60% of alcohol. Georgia makes chacha of tangerines, a cherry plum, a fig and fruits of a mulberry tree, but classical drink has to be made from grapes of a grade of Rkatsiteli.

The beginning of production of this drink belongs to ancient centuries of creation of the Georgian state. This drink is a keeper of family traditions of Georgia and it is considered useful alcoholic drink, and also is imported as national vodka.

Preparation of chacha

Ancient recipes of preparation of chacha remained in many regions of Georgia. At production of drink immature berries of grapes which are exposed to an extraction as by production of wine are used. Process of distillation is carried out by two times and 70% mature drink in oak barrels, and then add water.

At a stage of chacha do not delete the first and last fractions of alcohol therefore drink remains strong, has tart taste with grape smack. As a result of distillation in chacha methanol and fusel oils which should be removed by means of filtering is formed.

Distinctions in production technologies of chacha are shown in regions of the North Caucasus. In Georgia, generally use a grade of grapes of Rkatsiteli, and in Abkhazia Isabella and Kachichi use vinograda.

In the North Caucasus production of chacha is conducted both in house conditions, and in the specialized industrial enterprises. Home-made chacha is a symbol of longevity in the Caucasus and is used in pure form. Among youth cocktails from chacha with addition of pieces of fruit and cubes of ice are popular.

In winter season home-made chacha serves as the warming and anti-inflammatory drug in Georgia. It can be given both to main courses, and to desserts. Before preparation of drink grapes are not washed and do not delete a stone, it is pressed in high-capacity and add 5 liters of water, and then closed a gauze for 3-4 days.
