Potassium sorbate (e202) – potassium salt of sorbic acid. E202 is natural preservative which Гранулы сорбата калияis widely applied at conservation of foodstuff.

Chemical formula of nutritional supplement – C6H7KO2. Externally it represents powder and granules of white color.

Potassium sorbate e202 – natural preservative which is extracted generally from stones of some plants. Learned to receive it and a synthetic way – by means of neutralization of sorbic acid special reagents. As a result acid breaks up to salts of calcium, sodium and potassium from which receive the sorbates of the same name, and apply them in the food industry as preservatives. From all sorbates e202 the most soluble. At the room temperature its solubility makes 138 g/l.

Now sorbic acid and its salt are the most popular preservatives as they practically do not do harm to a human body. The maximum admissible dosage of preservative sorbate of potassium makes 0,1%-0,2% of the mass of finished goods.

At the moment use of sorbate of potassium is authorized in the territory of almost all states of the world. It is applied in Europe, Russia, Canada, Ukraine, America and the countries of Asia.

Potassium sorbate use

Preferential potassium sorbate e202 is used for conservation of vegetables and fruit, fish and meat products, added at preparation of candy stores and egg products, soft drinks, fruit juices.

As additive e202 is capable to slow down development of a mold, it is widely applied by production of sausage and cheese products. Add it to dough by production of rye bread also with the purpose to suspend formation of a mold.

Preservative sorbate of potassium has neutral taste that allows to use it by production of confectionery and chocolate products, and also at conservation of juice and vegetables. Also widely apply e202 as preservative in acid and spicy sauces of east kitchen as this rather effective antimicrobic remedy at high levels of acidity that allows to suspend formation of mushrooms and yeast in these products.

Most often e202 apply by production of the following types of products: smoked products, juice and jams, mayonnaise, margarine, sausages, wines, soft drinks, flour and sugar confectionery, tomato puree, ketchup.

Harm of sorbate of potassium

For today scientists did not agree in a consensus concerning harm of sorbate of potassium for a human body. Most of scientists consider what e202 is almost harmless and safe for the vast majority of people. Some scientists and researchers believe that any preservatives including potassium sorbate, do not bear any advantage for the person. Isolated cases of heavy allergic reactions were recorded.

Thus, considering probability of approach of adverse effects as a result of use of preservative and products which part additive is, physicians established admissible standards of the contents of this substance in food products. It allowed even to the most ardent opponents of preservatives to recognize that e202 in maximum permissible dosages it is safest for the person.

So, for example, in mayonnaise or mustard the amount of preservative should not exceed 200 g on 100 kg of a product. And in fruit and berry baby puree the quantity e202 should not be higher than 60 g on 100 kg of a product.
